Beneath the snowy apex of Nevado del Huila, Colombia’s tallest volcano, lies the remote and breathtakingly beautiful municipality of Gaitania. The isolated region, at one time infamous as a stronghold for the now mostly-dissolved FARC insurgency, is now home to a tight-knit community of small farmers who till the fertile volcanic soil in peace. Most residents of this area belong to the Nasa We’sx indigenous community: comprised of the Paez and Nasa tribes. Among this contingency of farmers is Elver Paya – a member of the Paez people and lifelong resident of the area. Both an agricultural and local leader, Elver Paya helped broker the community’s peace accord with the FARC back in 1992 and has been growing coffee on his 10 hectare estate of Finca Los Pedregales for over 25 years.

Full-bodied and exquisitely balanced with a malic, green apple acidity, this washed Caturra abounds with a veritable cornucopia of fruit flavors.
